Corn Tortilla Casserole recipe

If you are looking for a great dish to make that you know the whole family will love, then you will want to make sure that you try this amazing tasting corn tortilla casserole. This dish is sure to become an instant favorite in your home. Not only is it a definite crowd pleaser, but it is also a simple dish to prepare.

Ingredients List:

1 pack of corn tortillas
1 large can of enchilada sauce
1 pound of hamburger meat, cooked
1 large can of refried beans, heated
1 pound of cheddar cheese, shredded
1 large white onion, chopped
1 large tomato, diced
Green onion, chopped

Directions:

The first thing you are going to do is to pour the enchilada sauce into a large pan and heat it on a medium heat. Once it starts to bubble you will take tongs and dip the tortillas into the sauce, making sure to submerge them completely. Lay them one by one in a baking pan so they cover the entire bottom of the baking pan. Now spread the heated beans onto the tortillas, and then lay the hamburger meat on top of them. Now you want to spread ¾ of your cheddar cheese on top of that. Now it is time for you to spread the onion and tomato on top of that. Take some more tortillas and submerge them into the enchilada sauce in the same manner and lay them one by one on top, making sure to cover the entire dish completely. Now take your remaining cheese and sprinkle it on the very top evenly, then drizzle some of the enchilada sauce onto the dish and sprinkle on your green onions. Put the pan in the oven on 350 degrees F for about ten minutes or until the cheese is completely melted. Once your corn tortilla casserole is done you can serve it with a side of Spanish rice and corn on the cob, or whatever you choose. You will be amazed at how great this dish tastes!
