Bean and Cheese Quesadilla recipe
If you are looking for something that is quick and easy to make, yet will prove to be a real crowd pleaser, then you will want to make the bean and cheese quesadilla. Not only does this dish taste great, but it is very simple for you to make. The ingredients which go in to this recipe go very well together and give it the perfect flavor that will make it one of your favorites.
Ingredients List:
1 tbsp olive oil
1 small onion, finely chopped
1/2 small green pepper, chopped
1 can of black beans, drained and lightly mashed
1/2 cup of salsa
1/2 tsp chili powder
1 package of fajita-size tortillas
8 ounces of Pepper Jack cheese, shredded
1/2 cup of cilantro leaves
Directions:
You are going to heat your oil in a large nonstick pan over a medium high heat. Add in the onion and the green pepper then cook for 5 minutes, while stirring it occasionally. Then stir in the beans, the salsa and the chili powder. Cook for another 4 minutes, while stirring occasionally.
Spray a large nonstick pan with cooking spray. Place the pan over a medium high heat. Put one tortilla into the pan and cook it for about 1 minute. Now spread 1/3 cup of the bean mix and 1/3 cup of your cheese evenly on to the tortilla. Put a bit of the cilantro over the top of it. Put another tortilla on top of that and continue cooking for 1 minute. Press gently with a spatula and then flip the tortillas. Now cook them for about another minute. Once you have cooked all of the quesadillas you will want to cut them into quarters and serve them with a small side of salsa if you choose. These are refreshing tasting quesadillas that everyone will love.
